Ingredients:
Eight large, fresh beets
One cup vinegar
Half a cup of sugar
One and a half tsp whole cloves
One and a half tsp whole allspice
Half a teaspoon of salt
Instructions:
Let’s start with the beets. First, give them a good scrub and then cut off their tops, leaving about an inch. Place them in a Dutch oven and cover them with water. Bring the water to a boil and then let it simmer gently, covered, for about 25 to 30 minutes or until the beets are tender. Once done, carefully take them out of the water and let them cool down.
After the beets have cooled, peel off their skins and slice them according to your preference. Place the sliced beets in a basin and set aside for a moment.
Next, grab a small saucepan and add the vinegar, sugar, whole cloves, allspice, and salt. Heat this mixture until it comes to a boil, which should take about 5 minutes. Once the solution is boiling, pour it over the sliced beets.
For best results, refrigerate the beets for at least one hour before serving. When you’re ready to enjoy these tasty pickled beets, simply drain the liquid, and they’re good to go!
